From the West Wales Coast to the SONA Kitchen


We're teaming up with the Pembrokeshire Fish Company for a special fish night: the freshest West Wales seafood, cooked with the flavours of the Indian subcontinent.

This autumn, SONA at The Celtic Manor Resort in Newport is bringing together two very different culinary traditions for a special evening celebrating outstanding Welsh seafood and the flavours of the Indian subcontinent. We're delighted to be collaborating with the Pembrokeshire Fish Company, a fourth-generation fishing family bringing some of the freshest seafood from the waters off the West Wales coast directly to our kitchen.

Operating four fishing boats, the family lands an incredible variety of seasonal catch, including lobster, crab, crayfish and beautiful fresh white fish. Their commitment to quality and provenance has already earned them a loyal following, including at the popular Pontcanna fresh food market in Cardiff. For us, it's exactly the kind of produce that deserves to be celebrated: fresh, local and with a genuine story behind it.

For our special fish night, the SONA kitchen will take these exceptional Welsh ingredients and use them to create a menu inspired by traditional seafood dishes from across the Indian subcontinent. It's a collaboration that brings together the very best of our coastline with generations of Indian culinary tradition: caught off West Wales, cooked at SONA and served with a distinctly different flavour.
